Holland Inc./ Burgerville

Burgerville is well-known throughout the Northwest for three things: fresh, local and sustainable. In fact, it's their motto. They only buy locally grown (or raised) products, develop seasonal food items based on local agriculture, use wind-power, convert their cooking oil into biodiesel and have their own employee-lead recycling and composting program. Not only are they unique in these aspects, but they were also one of the first restaurants to hire a Registered Dietitian, Debe Nagy-Nero, MS, RD and incorporate the Nutricate receipt system, a nutrition facts label that prints out on your receipt that is customized to your order, into it's restaurant. Learn more about the Nutricate System here.

During my time at Burgerville, some of the projects I completed were:

  • Created the Seasonal Promotion for Chili: I developed, taste tested and conducted nutrient analysis for this chili at Burgerville. I also sat in on several production meetings as to how we would serve in the chili (in bowls, as chili cheese waffle fries and on burgers) and how much chili was appropriate for each menu item. I was also able to attend the food photo shoot to watch a food photographer work. View the promotional materials in the slide show above.
  • Created the Seasonal Promotion for the Holiday Milkshakes and Smoothies: I developed, taste tested and conducted nutrient analysis for the Peppermint Milkshakes and smoothies at Burgerville. I also worked on the pricing of this product. View the promotional materials in the slide show above.
  • Conducted Recipe Nutrient Analysis: I can't reveal their recipes-sorry!
  • Developed Nutrition Messages for the Nutricate Receipts.
  • Attended several state meetings regarding Nutrition Labeling Laws in restaurants.
  • Conducted sanitation inspections at several Burgerville restaurants.

Supervised Practice Time: 80 hours
